For those who want to taste the authentic taste of the Sierra Zapoteca, we offer our mezcal with the white agave worm. Beyond the various myths about its mystical and aphrodisiac properties, the worm has a slightly salty aftertaste and emphasizes the complex notes of this mezcal. With the first sip you can feel a slight tickling sensation on the front tongue. Then the palate is ready to discover the smoky tones of the wood resulting from the traditional manufacturing process and the sweet notes of the agave. With 48% alcohol, this mezcal is tender and friendly to the palate without losing its intensity and versatility.
Democrata Mezcal Artesanal
Country: Mexico
Alcohol: 48.1%
This mezcal is distilled from nine-year-old Espadin agave. This agave variety Espadin matures comparatively quickly, can be cultivated under controlled conditions and is also quite large compared to wild species. The production method is traditional, i.e. the agave are roasted or baked in a dagger and then ground by a stone mill operated by donkeys. They ferment, along with the juice and fiber, in wooden barrels with wild yeast before the mash is distilled in a copper still.
Tasting note: In the aroma and taste, a concise smoky note first appears, which is accompanied by a sweet-fruity impression, before the vegetable characteristics of the agave develop with a light mineral flavour.
Topanito Mezcal Artesanal Blanco 40%
Country: Mexico
Alcohol: 40%
Topanito Mezcal Artesanal is made from the Espadín agave variety and is produced at the Amantes de lo Ajeno distillery in Mexico’s Oaxaca state. The agave are harvested after at least seven years of growth and their hearts (piñas) are roasted in pits for five to eight days. This intense roast gives artisanal mezcal its distinctive, smoky, earthy character. The roasted agave hearts are crushed and ground in a donkey-powered mill. After adding water, the mash ferments for three to five days in open wooden and stone vats using wild yeasts. After the double distillation of the agave wine, Topanito Mezcal Artesanal Blanco 40% is brought down to its drinking strength of 40% with spring water.
The nose is dominated by notes of green peppers, lemon thyme, eucalyptus and roasted agave. Coriander seeds, pink grapefruit and pomelo are noticeable in the background. A grassy, fresh and light taste of green mango, hay and juniper convinces in the mouth. The mezcal says goodbye with notes of juniper and coriander.
